Western Omelettes to Go
I love this breakfast because it is portable. I pop a couple in my lunch. They can be pre-made at the start of the week and can be stored in the fridge for up to 5 days.
- 8 slices of deli turkey or ham
- 8 eggs
- 1/2 red pepper (diced)
- 1/2 Spanish onion
- Preheat oven to 350 F.
- Line muffin pans with turkey or ham slices.
- Whisk eggs, peppers, and onion together, and pour on top of turkey.
- Cook for 15-20 minutes.
