Western Omelettes to Go

I love this breakfast because it is portable. I pop a couple in my lunch. They can be pre-made at the start of the week and can be stored in the fridge for up to 5 days.

  • 8 slices of deli turkey or ham
  • 8 eggs
  • 1/2 red pepper (diced)
  • 1/2 Spanish onion
  1. Preheat oven to 350 F.
  2. Line muffin pans with turkey or ham slices.
  3. Whisk eggs, peppers, and onion together, and pour on top of turkey.
  4. Cook for 15-20 minutes.
