Western Omelettes to Go

I love this breakfast because it is portable. I pop a couple in my lunch. They can be pre-made at the start of the week and can be stored in the fridge for up to 5 days.
Course: Breakfast, Eggs

Ingredients

  • 8 slices of deli turkey or ham
  • 8 eggs
  • 1/2 red pepper diced
  • 1/2 Spanish onion

Instructions

  • Preheat oven to 350 F.
  • Line muffin pans with turkey or ham slices.
  • Whisk eggs, peppers, and onion together, and pour on top of turkey.
  • Cook for 15-20 minutes.
