Vegetable Omelette
- 2 eggs
- 1/2 tsp coconut oil
- 1/4 onion (diced)
- 1/2 tomato (diced)
- handful baby spinach
- 1/2 sweet pepper (red or green)
- Dice onions, tomato, and place in a bowl.
- In a separate bowl, beat 2 eggs.
- On the stove, heat a frying pan over low to medium heat and then add coconut oil
- Add the eggs and make sure the egg covers the entire bottom of the pan. Let it cook for 3-4 minutes or until the ends are cooked.
- Add the vegetables over half of the semi-cooked eggs and cook for 1-2 more minutes
- Turn off the stove and cover the pan and let it sit for a few minutes to retain the heat while it continues to cook.
