Vegetable Omelette

  • 2 eggs
  • 1/2 tsp coconut oil
  • 1/4 onion (diced)
  • 1/2 tomato (diced)
  • handful baby spinach
  • 1/2 sweet pepper (red or green)
  1. Dice onions, tomato, and place in a bowl.
  2. In a separate bowl, beat 2 eggs.
  3. On the stove, heat a frying pan over low to medium heat and then add coconut oil
  4. Add the eggs and make sure the egg covers the entire bottom of the pan. Let it cook for 3-4 minutes or until the ends are cooked.
  5. Add the vegetables over half of the semi-cooked eggs and cook for 1-2 more minutes
  6. Turn off the stove and cover the pan and let it sit for a few minutes to retain the heat while it continues to cook.
  7. Enjoy!
