  • 2 eggs
  • 1/2 tsp coconut oil
  • 1/4 onion diced
  • 1/2 tomato diced
  • handful baby spinach
  • 1/2 sweet pepper red or green


  • Dice onions, tomato, and place in a bowl.
  • In a separate bowl, beat 2 eggs.
  • On the stove, heat a frying pan over low to medium heat and then add coconut oil
  • Add the eggs and make sure the egg covers the entire bottom of the pan. Let it cook for 3-4 minutes or until the ends are cooked.
  • Add the vegetables over half of the semi-cooked eggs and cook for 1-2 more minutes
  • Turn off the stove and cover the pan and let it sit for a few minutes to retain the heat while it continues to cook.
