Tuna boats (cucumber)

  • 1 whole cucumber
  • 1 can tuna
  • 2 tbsp homemade mayonnaise

Mayonnaise

  • 1 cup light olive oil (at room temperature)
  • 1 egg room temperature
  • 2 tbsp. apple cider vinegar
  • Mustard
  • Salt and pepper to taste
  1. Combine the egg with the ACV and mustard in the blender.
  2. Slowly pour in the olive oil and blend until the mayonnaise reaches its desired consistency. Add salt and pepper to taste
  3. Mix in homemade mayonnaise into one can of tuna.
  4. Cut the cucumber in half lengthwise, scoop out the center and add the tuna salad.
