Tuna boats (cucumber)

  • 1 whole cucumber
  • 1 can tuna
  • 2 tbsp homemade mayonnaise


  • 1 cup light olive oil at room temperature
  • 1 egg room temperature
  • 2 tbsp. apple cider vinegar
  • Mustard
  • Salt and pepper to taste


  • Combine the egg with the ACV and mustard in the blender.
  • Slowly pour in the olive oil and blend until the mayonnaise reaches its desired consistency. Add salt and pepper to taste
  • Mix in homemade mayonnaise into one can of tuna.
  • Cut the cucumber in half lengthwise, scoop out the center and add the tuna salad.
