Spicy Shrimp with Mixed Greens
- 1 lb. deveined shrimp
- 8 ozs mixed greens
- 1 large tomato
- 1 avocado
- 1/2 cucumber
- 1/4 cup fresh cilantro
- salt and pepper to taste
- Coconut oil avocado oil if frying the shrimp
Spicy Vinaigrette
- 3 tbsp olive oil
- 1/4 cup lime juice
- 2 dashes of your favorite pepper sauce
- 2 tsp minced garlic
- salt and pepper to taste
- 1 tsp cumin
- You have the option of grilling the shrimp or frying them in a frying pan. Preheat oven or prepare grill to start. Add 1 tbsp of oil to the pan if frying or brush the grill with oil if grilling.
- In a medium sized bowl, combine all the ingredients to make the vinaigrette and mix them all together (save some to drizzle on the salad afterwards).
- Dip the shrimp into the vinaigrette mixture and then cook for 6-8 minutes, turning them over once.
- Set aside when cooked and assemble the salad.
- Add the shrimps on top and drizzle the remaining vinaigrette on the salad
