Spicy Shrimp with Mixed Greens

  • 1 lb. deveined shrimp
  • 8 ozs mixed greens
  • 1 large tomato
  • 1 avocado
  • 1/2 cucumber
  • 1/4 cup fresh cilantro
  • salt and pepper to taste
  • Coconut oil avocado oil if frying the shrimp

Spicy Vinaigrette

  • 3 tbsp olive oil
  • 1/4 cup lime juice
  • 2 dashes of your favorite pepper sauce
  • 2 tsp minced garlic
  • salt and pepper to taste
  • 1 tsp cumin


  • You have the option of grilling the shrimp or frying them in a frying pan. Preheat oven or prepare grill to start. Add 1 tbsp of oil to the pan if frying or brush the grill with oil if grilling.
  • In a medium sized bowl, combine all the ingredients to make the vinaigrette and mix them all together (save some to drizzle on the salad afterwards).
  • Dip the shrimp into the vinaigrette mixture and then cook for 6-8 minutes, turning them over once.
  • Set aside when cooked and assemble the salad.
  • Add the shrimps on top and drizzle the remaining vinaigrette on the salad
