Spicy Shrimp with Mixed Greens

  • 1 lb. deveined shrimp
  • 8 ozs mixed greens
  • 1 large tomato
  • 1 avocado
  • 1/2 cucumber
  • 1/4 cup fresh cilantro
  • salt and pepper to taste
  • Coconut oil avocado oil if frying the shrimp

Spicy Vinaigrette

  • 3 tbsp olive oil
  • 1/4 cup lime juice
  • 2 dashes of your favorite pepper sauce
  • 2 tsp minced garlic
  • salt and pepper to taste
  • 1 tsp cumin
  1. You have the option of grilling the shrimp or frying them in a frying pan. Preheat oven or prepare grill to start. Add 1 tbsp of oil to the pan if frying or brush the grill with oil if grilling.
  2. In a medium sized bowl, combine all the ingredients to make the vinaigrette and mix them all together (save some to drizzle on the salad afterwards).
  3. Dip the shrimp into the vinaigrette mixture and then cook for 6-8 minutes, turning them over once.
  4. Set aside when cooked and assemble the salad.
  5. Add the shrimps on top and drizzle the remaining vinaigrette on the salad
