Southern Fried Chicken and Roasted Sweet Potatoes

  • 2 large eggs
  • 1 cup almond flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp parsley flakes
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • Coconut oil for frying
  • 2 lbs chicken (thighs, drumsticks or thighs)
  • 2 peeled sweet potatoes
  • 2 cloves garlic
  • 2 tbsp fresh rosemary
  • 2 tbsp coconut oil
  • Sea salt and pepper to taste


  1. In a large bowl, marinate the chicken in all of the spices and set in the fridge for 3 hours (if time permits).
  2. Remove from fridge and let sit for 10-15 minutes.
  3. Heat oil in a large frying pan over medium heat and preheat oven to 400 F.
  4. Whisk eggs in medium-sized bowl.
  5. Dip chicken in whisked eggs.
  6. Coat/cover chicken in almond flour and place in hot oil.
  7. Cook both sides to golden brown (about 3-5 minutes each side).
  8. Cook chicken in oven for an additional 10-15 minutes to ensure that it is cooked thoroughly

Roasted Potatoes

  1. Preheat oven to 375 F.
  2. Line baking sheet with foil.
  3. Cube potatoes.
  4. Place potatoes in a bowl and add the coconut oil, sea salt, pepper, garlic, and rosemary. Mix it all together.
  5. Lay out on the baking sheet and cook for 30-35 minutes. Turn them over about 10 minutes before they’re done.
