Sausage ‘Mc’Muffin’ with Guacamole

This is the coolest looking breakfast, its a spin on the traditional breakfast sandwich except the nutritionless buns are replace with eggs. This trick into making this work is to get the eggs the right size for the sausage patty but once you get the hang of it then its dead easy. (The secret is is using a biscuit cutter). I commend you if you take the time to make your own breakfast sausages. I will get there one day though 🙂

Guacamole

  • 1 avocado
  • 1/2 tsp cayenne pepper
  • 1 tbsp chopped cilantro
  • 1 crushed roma tomato (or whatever you have)
  • salt to taste
  • juice of 1/4 lime
  • 2 tablespoons coconut oil
  • round breakfast sausage (I used the prepared one)
  • 2 large eggs
  • salt to taste
  1. Heat a skillet with coconut oil, heat a skilled to medium high and pour in 2 well beaten eggs, add salt and pepper and quickly cover over with 2 mason jar covers— this will give the eggs their perfect round shape
  2. Cook the breakfast sausage as per instructions
  3. Pour 1/4 cup of water into the skillet and cover for about 3 minute until cooked
  4. To make guacamole, scoop out avocado mash with a potato masher mix together all of the ingredients
  5. .Assemble the ‘McMuffin’ layering the egg, sausage,guacamole and then egg
