Pizzuchinni
Since discovering that zucchini are a healthy low-carb alternative that take on the consistency of breads and pasta which used to be my favourite foods, I now use it food so many interesting recipes. This one is my take on Pizza that I found somewhere and modified. Its mild flavour makes it a perfect substitute for almost anything.
- 4 Large zucchinis
- 1 pound lean beef
- 1 cup mushrooms
- 1/4 cup diced onions
- 1/2 cup green peppers
- 1 tbsp garlic
- 1 tsp coconut oil
- salt and pepper to taste
- 1 cup pasta sauce
- 2 tbsp grated parmesean
- 1 cup mozzarella cheese
- 2 tsp oregano
- 2 tsp basil
- Preheat oven to 400 degrees
- Heat oil in a large skillet and add the ground beef, onion, garlic, basil, oregano, salt and pepper. Cook over medium heat until beef is fully cooked ( approx. 10 minutes)
- While meat is cooking, cut the zucchini in half and then lengthwise and then scoop out the centre.
- Once the beef is cooked, add the pasta sauce and half of the parmesan cheese and cook for another 5 minutes.
- Place the scooped out zucchini into a baking dish and scoop in the meat mixture, top with mushroom, green peppers, mozzarella cheese and then sprinkle with the balance of the parmesan cheese.
- Bake for 10-12 minutes or until cheese is bubbling.
