Pesto Chicken Zoodles

This recipe is quick, easy and most of all tastes delicious. If you are not inclined to make you own pesto, save time and purchase a good brand from a health food store. Watch the sodium content.

  • 2 large zucchini
  • 1 cup cherry tomatoes
  • Fresh basil for garnish
  • Sea salt
  • 2 pounds chicken breast
  • 2 cloves garlic
  • 1 tbsp coconut oil
  • 2/3 cups pesto


  • To prep ingredients, julienne or spiralize zucchinis, cube chicken breasts, and slice cherry tomatoes in half.
  • Heat 1 tbsp coconut oil in a large skillet over medium heat.
  • Sauté garlic until tender, then stir in chicken. Season with sea salt and red pepper flakes. Cook chicken thoroughly.
  • Add zoodles and cherry tomatoes to the skillet. Stir until the zoodles are cooked.
  • Add pesto sauce.

The pesto in this one raises the caloric value considerably, so I used dried basil instead. Very yummy, simple recipe.
