Pesto Chicken Zoodles

This recipe is quick, easy and most of all tastes delicious. If you are not inclined to make you own pesto, save time and purchase a good brand from a health food store. Watch the sodium content.

  • 2 large zucchini
  • 1 cup cherry tomatoes
  • Fresh basil for garnish
  • Sea salt
  • 2 pounds chicken breast
  • 2 cloves garlic
  • 1 tbsp coconut oil
  • 2/3 cups pesto
  1. To prep ingredients, julienne or spiralize zucchinis, cube chicken breasts, and slice cherry tomatoes in half.
  2. Heat 1 tbsp coconut oil in a large skillet over medium heat.
  3. Sauté garlic until tender, then stir in chicken. Season with sea salt and red pepper flakes. Cook chicken thoroughly.
  4. Add zoodles and cherry tomatoes to the skillet. Stir until the zoodles are cooked.
  5. Add pesto sauce.

The pesto in this one raises the caloric value considerably, so I used dried basil instead. Very yummy, simple recipe.
