Mandarin Spinach Salad
- 16 oz baby spinach (about 5-6 cups)
- 2 cups mandarin oranges (drained)
- 1/2 cup slivered almonds
- 1/2 cup bean sprouts
- 2 Tbsp olive oil
- 1 Tbsp rice vinegar
- 1 tsp powdered mustard
- sea salt (to taste)
- pepper (to taste)
- ½ cup chopped red onions
- ½ cucumber
- 1 green onion
- In large bowl, whisk together oil, vinegar, mustard, salt and pepper.
- Add spinach, bean sprouts, almonds, green onion and oranges
- Toss to combine.
