Mandarin Spinach Salad

Ingredients

  • 16 oz baby spinach about 5-6 cups
  • 2 cups mandarin oranges drained
  • 1/2 cup slivered almonds
  • 1/2 cup bean sprouts
  • 2 Tbsp olive oil
  • 1 Tbsp rice vinegar
  • 1 tsp powdered mustard
  • sea salt to taste
  • pepper to taste
  • ½ cup chopped red onions
  • ½ cucumber
  • 1 green onion

Instructions

  • In large bowl, whisk together oil, vinegar, mustard, salt and pepper.
  • Add spinach, bean sprouts, almonds, green onion and oranges
  • Toss to combine.
