Mandarin Spinach Salad

  • 16 oz baby spinach (about 5-6 cups)
  • 2 cups mandarin oranges (drained)
  • 1/2 cup slivered almonds
  • 1/2 cup bean sprouts
  • 2 Tbsp olive oil
  • 1 Tbsp rice vinegar
  • 1 tsp powdered mustard
  • sea salt (to taste)
  • pepper (to taste)
  • ½ cup chopped red onions
  • ½ cucumber
  • 1 green onion
  1. In large bowl, whisk together oil, vinegar, mustard, salt and pepper.
  2. Add spinach, bean sprouts, almonds, green onion and oranges
  3. Toss to combine.
