German Apple Pancakes

This recipe has a higher amount of carbs, so be sure to balance out the rest of the day with lower carb option

  • 6 eggs
  • 1 cup almond milk
  • 3 tbsp coconut oil
  • 2 tsp vanilla
  • 2 tsp pure maple syrup
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/8 tsp nutmeg
  • 2 apples- cored and diced
  • 2 tbsp coconut oil
  • 2 tbsp raw organic honey
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 lemon (juiced)
  • Handful of crushed pecans
  1. Preheat oven to 425 F.
  2. In a large bowl, whisk eggs, almond milk, coconut oil, vanilla, and maple syrup.
  3. In a small bowl, stir coconut flour, nutmeg, and baking soda.
  4. Mix dry ingredients into the wet ingredients and beat well to combine. Set aside while you prepare the apples.
  5. In a small frying pan, heat 2 tbsp coconut oil and raw organic honey.
  6. Stir in cinnamon, nutmeg, and the juice from ½ lemon, then cook for 1 minute.
  7. Add apples and sauté until all the apples are nicely coated.
  8. Using a ladle, pour batter onto a skillet or grillle. Cook on one side until the pancake starts to bubble, then flip and cook the other side
  9. Remove from heat and sprinkle with walnuts
