Creamy Avocado Tuna Salad

This recipe is chocked full of healthy fats from the avocado,tuna and olive oil!

  • 7 0z. cans of tuna
  • 2 avocados
  • 1 tbsp of homemade mayonnaise
  • 1/4 red onion
  • 1/2 cucumber
  • 2 carrots
  • 2 celery stalks
  • 1 clove garlic
  • 1 lemon
  • 1/2 lettuce


  • 1 cup light olive oil
  • 1 egg at room temperature
  • 2 tbsp apple cider vinegar- AVC
  • Mustard
  • Salt and pepper to taste

Homemade Mayonnaise

  1. Combine the egg with the ACV and mustard in the blender.
  2. Slowly pour in the olive oil and blend until the mayonnaise reaches its desired consistency. Add salt and pepper to taste.


  1. Drain the tuna and add 1 tbsp of homemade mayonnaise.
  2. Dice carrots, onions, and celery, and grate the garlic.
  3. Gently remove the avocados from the skin if you want to use them as bowls.
  4. Mash the avocados and add lemon juice.
  5. Combine the mashed avocado with the tuna salad and the carrots, onions, celery, and garlic.
  6. Slice cucumber and place on a bed of lettuce, then put a scoop of the avocado tuna salad on top or serve in the skin of the avocado.
  7. Enjoy!
