Creamy Avocado Tuna Salad

This recipe is chocked full of healthy fats from the avocado,tuna and olive oil!

  • 7 0z. cans of tuna
  • 2 avocados
  • 1 tbsp of homemade mayonnaise
  • 1/4 red onion
  • 1/2 cucumber
  • 2 carrots
  • 2 celery stalks
  • 1 clove garlic
  • 1 lemon
  • 1/2 lettuce


  • 1 cup light olive oil
  • 1 egg at room temperature
  • 2 tbsp apple cider vinegar- AVC
  • Mustard
  • Salt and pepper to taste


Homemade Mayonnaise

  • Combine the egg with the ACV and mustard in the blender.
  • Slowly pour in the olive oil and blend until the mayonnaise reaches its desired consistency. Add salt and pepper to taste.


  • Drain the tuna and add 1 tbsp of homemade mayonnaise.
  • Dice carrots, onions, and celery, and grate the garlic.
  • Gently remove the avocados from the skin if you want to use them as bowls.
  • Mash the avocados and add lemon juice.
  • Combine the mashed avocado with the tuna salad and the carrots, onions, celery, and garlic.
  • Slice cucumber and place on a bed of lettuce, then put a scoop of the avocado tuna salad on top or serve in the skin of the avocado.
