Creamy Avocado Tuna Salad
This recipe is chocked full of healthy fats from the avocado,tuna and olive oil!
- 7 0z. cans of tuna
- 2 avocados
- 1 tbsp of homemade mayonnaise
- 1/4 red onion
- 1/2 cucumber
- 2 carrots
- 2 celery stalks
- 1 clove garlic
- 1 lemon
- 1/2 lettuce
Mayonnaise
- 1 cup light olive oil
- 1 egg at room temperature
- 2 tbsp apple cider vinegar- AVC
- Mustard
- Salt and pepper to taste
Homemade Mayonnaise
- Combine the egg with the ACV and mustard in the blender.
- Slowly pour in the olive oil and blend until the mayonnaise reaches its desired consistency. Add salt and pepper to taste.
Avocado
- Drain the tuna and add 1 tbsp of homemade mayonnaise.
- Dice carrots, onions, and celery, and grate the garlic.
- Gently remove the avocados from the skin if you want to use them as bowls.
- Mash the avocados and add lemon juice.
- Combine the mashed avocado with the tuna salad and the carrots, onions, celery, and garlic.
- Slice cucumber and place on a bed of lettuce, then put a scoop of the avocado tuna salad on top or serve in the skin of the avocado.
