Cream of Cauliflower Soup

  • 2 tablespoons butter
  • 1 onion finely chopped
  • 2 cups chicken broth
  • 1 head cauliflower cut into small pieces
  • 2 medium potatoes
  • 1 carrot
  • 2 cups milk
  • 1/2 cup cheddar cheese
  • 1/4 teaspoon ground pepper


  • Melt butter in a soup pot, add onion and saute until tender.
  • Add chicken broth, cauliflower, potatoes, carrots and pepper.
  • Bring to a boil turn down and simmer for about 15 minutes until cauliflower is tender.
  • Puree using a hand held blender in the pot or use a blender to puree, then return back to the pot.
  • Add milk .
  • Top with cheese.
