Chicken Stuffed Sweet Potatoes

My husband knows that I love to go to the fridge and make dishes out of what seems like an empty fridge. That’s why I like recipes like this one “where you throw in whatever you have in your fridge. You can add 1- 2 ingredients like cinnamon and chives, or go wild and add mushrooms, bacon, chicken, spinach, smoked turkey, goat cheese, walnuts, cranberry sauce, or onions.

  • 2 med. sweet potatoes
  • 2 tbsp butter
  • 4 tbsp milk
  • 1 cup shredded leftover- chicken
  • 4 tbsp chopped spinach
  • 2 tbsp shredded cheddar cheese
  • 1 tbsp cranberries
  • salt and pepper to taste
  1. Preheat oven to 400 F. Pierce the potatoes with a fork throughout and bake for 45 minutes or until soft. (When in a hurry, I’ve used the potato button on the microwave to have them cook in 8 minutes).
  2. Cut the potatoes lengthwise and carefully scoop out the inside and place in a mixing bowl.
  3. Add butter and cream to the potatoes and mix until smooth. Add salt and pepper to taste.
  4. Put the mashed sweet potato back inside the skin, top with turkey, spinach, and cheese, and put potatoes back into the oven for 5 minutes until cheese is melted.
  5. Top with cranberries.
