Chicken Stuffed Sweet Potatoes

My husband knows that I love to go to the fridge and make dishes out of what seems like an empty fridge. That’s why I like recipes like this one “where you throw in whatever you have in your fridge. You can add 1- 2 ingredients like cinnamon and chives, or go wild and add mushrooms, bacon, chicken, spinach, smoked turkey, goat cheese, walnuts, cranberry sauce, or onions.

  • 2 med. sweet potatoes
  • 2 tbsp butter
  • 4 tbsp milk
  • 1 cup shredded leftover- chicken
  • 4 tbsp chopped spinach
  • 2 tbsp shredded cheddar cheese
  • 1 tbsp cranberries
  • salt and pepper to taste


  • Preheat oven to 400 F. Pierce the potatoes with a fork throughout and bake for 45 minutes or until soft. (When in a hurry, I’ve used the potato button on the microwave to have them cook in 8 minutes).
  • Cut the potatoes lengthwise and carefully scoop out the inside and place in a mixing bowl.
  • Add butter and cream to the potatoes and mix until smooth. Add salt and pepper to taste.
  • Put the mashed sweet potato back inside the skin, top with turkey, spinach, and cheese, and put potatoes back into the oven for 5 minutes until cheese is melted.
  • Top with cranberries.
