Chicken Souvlaki with Mashed Potatoes

Chicken on a Stick! Can it get any better than this? This simple recipe is fast to make and super-tasty.

  • 1 lb. of chicken (beef or pork)
  • 1/4 cup lemon juice
  • 2 cloves garlic (minced)
  • 11/2 tbsp oregano
  • 11/2 tbsp olive oil
  • tsp ¼salt
  • 8 skewers
  1. Combine all the ingredients (except the chicken) in a bowl.
  2. Cut the meat into small cubes and add to the mixture. If time permits, let it sit in the fridge overnight.
  3. Skewer the meat and try to keep them all the same size.
  4. Grill the chicken on the BBQ or in the oven at 400 F.
  5. 5.Cook on one side for 6-8 minutes, then turn over and cook for another 6-8 minutes or until the meat is fully cooked. If you’re using bamboo skewers, be careful not to put the bamboo directly on the heat of the BBQ. Cover the skewers with foil when putting them in the oven.
  6. Serve on a plate of mashed pumpkin (just mash and add butter) or your favourite low-carb side
  7. Add diced cucumbers and tomatoes on the side.
