Chicken Soup

Give your left-over chicken or turkey a fresh face-lift with this hearty soup.

  • 6-8 cups of chicken stock
  • 2 cups of cooked chicken or turkey
  • 2 small zucchinis (sliced)
  • 4 small carrots (sliced)
  • 1 medium sweet potato (cubed)
  • 1 medium onion (diced)
  • 2 bay leaves
  • salt and pepper to taste
  • 1 tbsp butter
  1. In a large stock pot, heat the butter and sauté the onions, then add the chicken stock and chicken (or turkey)
  2. Add the rest of the ingredients and simmer for 20-30 minutes or until the vegetables are tender.
  3. Add salt and pepper to taste
