Chicken Caesar Salad

Course: chicken


  • 2 chicken breasts
  • 6 slices of bacon
  • 2 heads of romaine lettuce
  • 10 cherry tomatoes cut into quarters
  • 2 tbsp olive or avocado oil
  • 2 tsp garlic minced
  • 2 tsp ground pepper
  • 2 diced scallions
  • 1/2 cup Caesar dressing

Caesar Dressing

  • 1 tbsp lemon juice
  • 2 tbsp homemade mayonnaise see below
  • 1/2 cup extra-virgin olive oil or avocado oil
  • 6 garlic cloves minced
  • 1 tbsp Dijon mustard
  • Sea salt and black pepper to taste


  • 1 cup light olive oil at room temperature
  • 1 egg room temperature
  • 2 tbsp. apple cider vinegar ACV
  • Mustard to taste
  • Salt and pepper to taste


Homemade Mayonnaise

  • Combine the egg with the ACV and mustard in the blender.
  • Slowly pour in the olive oil and blend until the mayonnaise reaches its desired consistency. Add salt and pepper to taste

Caesar Salad

  • Heat the grill and add the chicken breasts (seasoned with coconut oil, garlic, salt and pepper).
  • Grill the chicken until cooked, which should take about 5 minutes per side. Once cooked, remove from heat and allow to cool.
  • Cut the chicken into cubes, strips, or your desired size.
  • In a large bowl, cut up 2 heads of romaine lettuce.
  • In another large bowl, combine bacon, tomatoes, scallions, and half of the Caesar dressing.
  • Combine the chicken with the lettuce and bacon combo and mix them together until ingredient are evenly distributed.
