Chicken Caesar Salad

  • 2 chicken breasts
  • 6 slices of bacon
  • 2 heads of romaine lettuce
  • 10 cherry tomatoes cut into quarters
  • 2 tbsp olive or avocado oil
  • 2 tsp garlic (minced)
  • 2 tsp ground pepper
  • 2 diced scallions
  • 1/2 cup Caesar dressing

Caesar Dressing

  • 1 tbsp lemon juice
  • 2 tbsp homemade mayonnaise (see below)
  • 1/2 cup extra-virgin olive oil or avocado oil
  • 6 garlic cloves (minced)
  • 1 tbsp Dijon mustard
  • Sea salt and black pepper to taste

Mayonnaise

  • 1 cup light olive oil (at room temperature)
  • 1 egg room temperature
  • 2 tbsp. apple cider vinegar (ACV)
  • Mustard to taste
  • Salt and pepper to taste

Homemade Mayonnaise

  1. Combine the egg with the ACV and mustard in the blender.
  2. Slowly pour in the olive oil and blend until the mayonnaise reaches its desired consistency. Add salt and pepper to taste

Caesar Salad

  1. Heat the grill and add the chicken breasts (seasoned with coconut oil, garlic, salt and pepper).
  2. Grill the chicken until cooked, which should take about 5 minutes per side. Once cooked, remove from heat and allow to cool.
  3. Cut the chicken into cubes, strips, or your desired size.
  4. In a large bowl, cut up 2 heads of romaine lettuce.
  5. In another large bowl, combine bacon, tomatoes, scallions, and half of the Caesar dressing.
  6. Combine the chicken with the lettuce and bacon combo and mix them together until ingredient are evenly distributed.
