Cauliflower and broccoli parmesan fritters

These are great for breakfast, lunch, as a side dish for dinner, or whenever you feel for a snack. This is one of the few recipes in which I cheat and add some cheese, but if you’re going hard core, it’s not necessary.

  • 1 cup finely diced cauliflower
  • 1 1/2 cups finely diced broccoli
  • 1/2 cup grated Parmesan cheese
  • 2 whole eggs
  • 1 tbsp coconut flour
  • to taste Black pepper
  • 1 Tbsp Coconut oil for frying


  • You can either use a grater or food processes to dice the broccoli and cauliflower.
  • Combine cauliflower, broccoli, and parmesan with eggs, coconut flour, and black pepper. If not using any cheese, add a good pinch of salt. Mix well.
  • Heat a large frying pan over high heat and melt 1 tbsp of coconut oil. Shape mixture into balls by hand and flatten into fritters before adding to the pan. Squeeze out some of the excess water. Bring the heat to medium and fry on each side for 4 minutes or until golden brown crust forms.
