Cajun Dirty Brown Rice
This is a healthy version of the Louisiana favourite, dirty rice.
- 1 cup brown rice (uncooked)
- 8 ounces mushrooms (cremini or button, finely chopped)
- 1 pound turkey (ground)
- 2 stalks celery (finely chopped)
- 1/2 pepper (finely chopped)
- 1/4 cup parsley (finely chopped)
- 1 pack creole seasoning
- In a saucepan, bring 2.5 cups of water to a boil and then add the rice. Lower the heat to low and simmer covered for about 30 minutes or until the water has been absorbed.
- While the rice is cooking, brown the turkey and mushrooms in a skillet until it fully cooked.
- Remove turkey and mushrooms and now sauté the celery and peppers until fully cooked.
- Add back the turkey and mushrooms and now stir in the rice, green onions and parsley. Season to taste with Creole seasoning.
