Cajun Dirty Brown Rice

This is a healthy version of the Louisiana favourite, dirty rice.

  • 1 cup brown rice (uncooked)
  • 8 ounces mushrooms (cremini or button, finely chopped)
  • 1 pound turkey (ground)
  • 2 stalks celery (finely chopped)
  • 1/2 pepper (finely chopped)
  • 1/4 cup parsley (finely chopped)
  • 1 pack creole seasoning
  1. In a saucepan, bring 2.5 cups of water to a boil and then add the rice. Lower the heat to low and simmer covered for about 30 minutes or until the water has been absorbed.
  2. While the rice is cooking, brown the turkey and mushrooms in a skillet until it fully cooked.
  3. Remove turkey and mushrooms and now sauté the celery and peppers until fully cooked.
  4. Add back the turkey and mushrooms and now stir in the rice, green onions and parsley. Season to taste with Creole seasoning.
