Breakfast Pizza

Pizza for breakfast? Why not? The eggs will actually replace the pizza crust in this recipe so no need to worry about the high carbs. Try this pizza inspired dish that will leave you feeling satisfied and full for hours. Its the ingredients such as the pepperoni, tomatoes and cheese that gives the dish the pizza flair.

Cook Time: 8 minutes

  • 2 tsp butter
  • 2 eggs
  • 6 grape tomatoes
  • 1/4 cup onions
  • 6 slices pepperoni
  • 6 sliced olives
  • 2 oz. mozzarella cheese
  • 1 tbsp. parmesan cheese
  • 1/2 tsp. oregano
  • salt and pepper to taste


  • Using butter, heat skillet on medium and add 2 well beaten eggs. Let cook until the corners start to get a bit crusty
  • Top with sliced tomatoes, sliced olives, pepperoni, onions, cheeses and oregano.
  • Cover the pan and let cook for a couple more minutes then turn off heat but let the eggs continue to sit on the stove until it fully cooks (approx. 5 minutes).

It would be nice if the recipes had nutritional information included. Since I am trying to track the fewer ingredients the better.
