Black Bean Lettuce Wraps

  • 3/4 cup brown rice
  • 1 cup water
  • 1 can black beans (rinsed and drained, 15 ounces)
  • 3 tablespoons tomato salsa
  • 1/3 juice of lime
  • cup ½fresh cilantro (chopped)
  • Iceberg lettuce
  • 1 cup corn salsa
  • 1/2 cup guacamole (or 1 avocado)
  1. Prepare the brown rice according to package directions (bring rice and water to a boil, stir, then cover and reduce heat to low for 20 minutes. Remove from heat for 5 minutes).
  2. Drain black beans and pour to a small pot over low heat and add the tomato salsa. Heat for about 10 min.
  3. Chop the fresh cilantro leaves. Add the cilantro to the cooked rice along with the lime juice. Stir to combine.
  4. To put a wrap together: begin with a lettuce leaf Add a scoop of cilantro lime rice, followed by a scoop of the black beans, and corn salsa. Sprinkle with reserved cilantro leaves, sliced avocado, or guacamole.
