Banana Muffins

  • 4 medium ripe mashed bananas
  • 4 eggs
  • 1/2 cup almond butter
  • 4 tbsp coconut oil
  • 1/2 cup coconut or almond flour
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla
  • Pinch of sea salt
  1. Preheat your oven to 350 F.
  2. Combine the bananas, eggs, almond butter, and coconut oil in a mixer or blender.
  3. Once blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt, and mix well.
  4. Grease a 12 hole muffin pan with coconut oil and pour in your batter.
  5. Place muffin pan into the preheated oven, and bake for 25-30 minutes or until a toothpick inserted into the centre comes out clean.
  6. Remove from oven and flip the bread out onto a cooling rack.
