Banana Coconut Pancakes

  • 4 medium eggs at room temperature
  • 1 tsp pure vanilla extract
  • 1/3 cup coconut flour
  • 1 tsp baking powder
  • 1 tbsp coconut oil
  • 2 bananas very ripe


  • Heat your pan over medium to low heat and grease the pan generously with a lot of butter or coconut oil.
  • Beat the eggs until frothy and then add the remaining ingredients.
  • Drop the batter onto the hot pan and allow to cook for about 3-4 minutes per side or until the corners are brown. Keep them small as the batter is very delicate (because of the coconut flour)
  • Top with apple butter or a small amount of maple syrup
