Banana Coconut Pancakes

  • 4 medium eggs (at room temperature)
  • 1 tsp pure vanilla extract
  • 1/3 cup coconut flour
  • 1 tsp baking powder
  • 1 tbsp coconut oil
  • 2 very ripe bananas
  1. Heat your pan over medium to low heat and grease the pan generously with a lot of butter or coconut oil.
  2. Beat the eggs until frothy and then add the remaining ingredients.
  3. Drop the batter onto the hot pan and allow to cook for about 3-4 minutes per side or until the corners are brown. Keep them small as the batter is very delicate (because of the coconut flour)
  4. Top with apple butter or a small amount of maple syrup
