Banana Coconut Pancakes
- 4 medium eggs (at room temperature)
- 1 tsp pure vanilla extract
- 1/3 cup coconut flour
- 1 tsp baking powder
- 1 tbsp coconut oil
- 2 very ripe bananas
- Heat your pan over medium to low heat and grease the pan generously with a lot of butter or coconut oil.
- Beat the eggs until frothy and then add the remaining ingredients.
- Drop the batter onto the hot pan and allow to cook for about 3-4 minutes per side or until the corners are brown. Keep them small as the batter is very delicate (because of the coconut flour)
- Top with apple butter or a small amount of maple syrup
