Banana Bread

  • 3 large ripe bananas (mashed)
  • 2 eggs
  • 1 Tsp pure vanilla extract
  • 3 Tbsp pure maple syrup
  • 2 cups almond meal/flour
  • 1 cup dark chocolate chips
  • 1 Tbsp baking powder
  • ¼ tsp kosher salt
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 Tbsp shredded coconut (optional)
  1. Preheat the oven to 350 degrees F and lightly oil a loaf pan.
  2. Add all of the ingredients for the banana bread to a blender. Blend until combined.
  3. Pour banana bread batter into the prepared loaf pan and use a spoon or spatula to spread the batter evenly.
  4. Drizzle the top with shredded coconut if desired
  5. Bake for 40 to 50 minutes, until bread tests clean.
  6. Allow bread to cool for 30 minutes.
  7. Run a knife along the edges between the bread and the baking pan in order to release the bread from the pan. Carefully turn out onto a cutting board.
