Ingredients

  • 2 cups baby spinach chopped
  • 2 cups arugula chopped
  • 1/2 pear chopped
  • 1 teaspoon pumpkin seeds
  • 1 tablespoon hemp seeds
  • 1/2 avocado chopped
  • 2 tablespoons garbanzo beans
  • Dressing Recipe:
  • 1 juice of lemon
  • 1 clove garlic minced
  • 1/2 teaspoon Dijon mustard
  • 1/2 tablespoon balsamic vinegar
  • 1/2 teaspoon maple syrup
  • ground pepper to taste

Instructions

  • Whisk lemon, minced garlic, mustard, vinegar, maple syrup and pepper in a bowl.
  • Mix spinach, arugula, pear, avocado and beans together in a large bowl and toss with dressing.
  • Sprinkle with pumpkin and hemp seeds.
